Lego Cupcakes

I made these lego cupcakes for my son's 7th birthday party.  They were super cute, but I made a yummy chocolate butter frosting that was not strong enough for the weight of the lego candies.  They were sliding off and we had to reposition a few of them when distributing the cupcakes to party guests.  I would suggest either refrigerating cupcakes frosted with a butter frosting prior to your party or using a frosting made with butter and shortening.

I bought some candy wafers for melting at Hobby Lobby.  You can find these in many colors at most craft stores.  I ordered Lego silicone candy molds from Amazon.

I followed the simple microwave melting instructions on the candy melts package and spooned the melted candy into the molds.  I then put them in the freezer until firm.  Once firm, they easily push right out of the candy molds.  Start making these a day or two before your party so that you have plenty of time to make multiple colors and the quantity that you need.

I used extra lego candy pieces to decorate the party table.  

I had a hard time finding anything lego themed for the birthday party that wasn't super expensive and only available online.  I was able to find the silicone molds for around $5 for a set of two on Amazon, but couldn't find much else.  I went with neutral themed bright colored tableware that I bought locally and on sale.

5 Delicious Meals Made From Leftover Potatoes

I thought I would share some ways I like to use leftover mashed or baked potatoes.  These recipes are delicious and often requested by the boys.  Sometimes I even make extra potatoes just to use as ingredients later in the week which simplifies meal planning.  These recipes are all pretty budget friendly too since the main ingredient potatoes are inexpensive.

First Day of School

We had a great 1st day of school morning.  Good weather and good spirits (although now it is raining) as we walked and rode bikes to the bus stop.  The whole family went for the big send off.  He looks so much older than he did last year.  

I love these printable signs for the first and last day of school.  You can find them at 3 Dinosaurs.  You can print signs for preschool through 12th grade.

Strawberry Glazed Pie

Strawberry pie, with layers of juicy strawberries surrounded by sweet glaze on a crispy crust must be the quintessential summer dessert.  I remember bringing home a strawberry pie from Shoney's restaurant when I was a kid and thinking it was the best thing ever.  ​

This pie is both delicious and simple.  I love using homemade glaze made with common ingredients.  No artificial dyes or flavorings that you would find in packaged store bought glaze.  The best part is that making homemade glaze is really pretty easy.  

Ingredients:
2 lb. fresh strawberries
1/2 cup sugar
4 tsp. cornstarch
Cooled, baked pie shell


1.  Crush about 1/2 lb. strawberries in food processor or by hand, measure to get about 1 cup crushed berries after mashing.  

2.  Cook the 1 cup mashed berries and 1 cup water at medium high heat for about two minutes.

3.  Sieve the cooked berries to get the juice.  Discard the berry pulp.

4.  Combine 1/2 cup sugar and 4 tsp. cornstarch in a saucepan.  Gradually stir in berry juice.  Cook stirring constantly till thick and clear.

5.  Line pie crust with a layer of sliced strawberries.  Drizzle slightly cooled strawberry glaze over berries.  Layer on more sliced strawberries and pour remaining glaze over berries.  

6.  Refrigerate until serving time.  Serve with whipped cream.
