How to Make Easy Grilled Ribs

​I used to be intimidated at the thought of making ribs, then one day I decided to try it and discovered how easy it really is.  My family loves ribs and since there is so little prep work, they are really easy to make.

You won't believe how easy it really is to grill ribs.  ​I generously sprinkle a purchased rib rub on the ribs then simply grill.  I don't put any BBQ sauce on the ribs while grilling, but have it available for serving.

​You need to grill ribs over indirect heat so they don't cook too fast and burn.  After the charcoal is hot, simply move the hot coals over to the sides (with grilling utensils) and grill the ribs in the center of the grill.  The package (your ribs came in) will say to grill for 1 1/2 to 2 hours, but pay attention to your ribs, checking the temperature.  These only took about an hour and 15 minutes.

​For an easy side dish perfect for summer, grill some sweet corn when the ribs are almost done.  My husband partially shucked some corn then moistened them with water (to keep the husks from burning) and let them sit for awhile before grilling.  Sweet corn is one of our favorite summer sides.

​You can grill great ribs too with these tender and juicy Smithfield Extra Tender Back Ribs available in the fresh pork case at Walmart.  My favorite thing about Smithfield Ribs besides how easy they are to make is that they have no added hormones or steroids.

Easy Grilled Ribs

Ingredients:
Rack of ribs
Your favorite rib rub ( I use store bought)
KC Masterpiece BBQ sauce (optional for serving)

1.  Rub or sprinkle the rib rub generously all over the ribs, flipping to get it on both sides.  
2.  Place ribs on the grill over indirect heat.
3.  Grill for 1 1/2 to 2 hours until done.    

Additional notes:  If you like, you can baste with BBQ sauce part way through cooking.  If the the grill gets too hot and you think the ribs could burn before they are tender and cooked through, simply slide a piece of foil under the ribs.  Ribs are safe to eat when they reach an internal temperature of 145 degrees F, but they will be more tender if you cook them to 180-190 degrees F.

I love easy summer meals like these simple grilled ribs.  I would much rather enjoy my time outdoors making memories with my family than spending lots of time in the kitchen.

Fun Reading with ASPCA Kids Rescue Readers #momsmeet #studiofun

We received this adorable set of ASPCA Kids Rescue Readers to review along with a couple of extra ASPCA Kids books.  Our children love books and we read aloud to them almost every night so they were thrilled when a box of new books arrived.  They are also begging for a pet.  We told them that they have to wait until we are no longer renting and are in our own home, which should be very soon. With their love of both animals and reading, they loved these books.

These stories follow real rescued  animals (from the animals perspective).  They are beautifully illustrated and tell the cutest stories.  At the end of the book, they show a picture of the real animal and give more details of the animal's rescue story.  The boys love this part and always ask me to read it too.  In fact, McKinley was rescued in our hometown so we always wonder if we will see McKinley around town.  ​

How to Set Up Your Child’s Room to Foster Independence

​While it’s within a parent’s nature to protect their children and provide for all of their needs, there comes a time when kids need to learn to provide for themselves in small ways. In your home, that may mean they’re learning to dress themselves, or embracing the freedom to drag out art supplies without asking. When your kids begin to complete tasks without help, they feel a sense of pride and competence that leads to higher self-esteem. Here are a few organizing tricks from Modernize that will help them entertain themselves and learn problem solving skills. ​

Make Everything that’s Safe Accessible
 
Make sure to put anything that’s safe for them to use within reach so they have easy access to whatever stimulates or interests them. Use clear bins, shelves, and labels to keep organized. These will serve double-duty: if your kids know where everything is, they won’t have to run and ask you questions like “where are the markers” every five minutes, which means they can be the leader of their own activities.
 
If they aren’t masters of the written word quite yet, you can print pictures of items and use them as labels, or put certain categories of items in bins of a designated color. When everything has its proper place, it’s a lot easier for kids to participate in cleanup and eventually learn how to take care of it themselves.

Make Everyday Clothes Easy to Reach 

Letting your preschool-aged kid pick out clothes for the a school day may be your worst nightmare, but if they have a desire to, that means they’re ready to start being independent in that area. Foster that independence, while keeping it in check. You have total control of what clothes end up in their closet, so put sensible day-to-day pieces within easy reach, and bundle outfits together as much as possible. Keep the latest Disney princess ensemble in the dress-up bin so they know it’s not an option. Use open baskets to store socks and underwear. That way, if they are ready to start making decisions and dressing themselves, they won’t jam their fingers in the drawer.
 
Give Your Child the Tools to Stay in Their Own Bed
 
One of the biggest battles of trying to inch your little one toward independence is to get him or her out of your bed and sleeping all night on their own. A night light or hall light that stays can disrupt your child’s sleep patterns, but kids of all ages are afraid of the dark. Place a push-light or flashlight near their bed so that they have more control. When they feel afraid or need to use the restroom, they can easily turn on the light. Get a large stuffed animal that will bring them comfort at night, leave their favorite picture book on the nightstand, and set up a sound machine (but make sure it’s not too loud). Keep the room cool, as a mild drop in body temperature induces sleep. Make sure there are plenty of warm covers—they may start feeling too cozy to journey down a cool hallway to your room!
 
Hang a Chore/Responsibility Chart
 
Teaching your kids to be responsible is one of the most effective ways to foster independence. It can start with the smallest things, like making sure all the Legos are put away before leaving the room, or mastering a nightly routine. If you want your kids to build good habits, remind them what needs to be done while learning to be hands off. For example, if your kid is old enough to start going through the motions of getting ready without you, hang a chart or signs on the wall that reminds them what to do.

Create an Activity Area 

Children’s worlds are governed by rules and regulations that they don’t understand. Even when they’re running free on a sunny day, they must stay within a certain area so they’re not in danger. When they play, they have to learn to share and clean up. These are all incredibly important lessons, but if a child feels too limited, he or she won’t be able to establish that resourceful independence. Make sure there’s an area of the room, or at least in the house, where they can do whatever activity that they want: read, paint, draw, play pretend, dress up, etc. Cover the floor with foam tiles or paint the wall with chalkboard paint and let them draw to their hearts’ content. Because while it’s undoubtedly imperative for kids to learn independence, the most important thing for them to do is to have fun.

Happy Mother's Day and We Have Some Exciting News!

I have been sitting on some pretty exciting news and realized earlier today that Mother's Day would be the perfect day to share it.  But our day was full with church and family activities including starting our garden (so excited about the garden) so here we are at 10:00 o' clock at night, but hey it's still Mother's Day.   Happy Mother's Day to all the night owl mama's out there.  Yes, Mom I'm talking to you too.  I love you!

If you guessed that we are having a baby, you are right!  We are around four months pregnant and due in October.  We waited until we were 12 weeks to tell the boys and close family.  When we took this photo, the boys had not figured it out yet.

By the time we took this photo they knew.  They finally wondered why our youngest was holding a chalk board that said big brother and after a little hinting they figured it out.  They were so  excited.
