Homemade tortilla chips are such a treat. Fresh and warm, they are great with homemade guacamole or homemade salsa. You can also cut the tortillas into strips to serve with crock pot chicken tortilla soup.
These homemade tortilla chips are so much better than store bought and they will stay fresh for several days in an air tight container.

I use peanut oil which works beautifully for frying, but you can use another oil such as vegetable oil if you like.
Drain on a cooling rack (affiliate link) over a paper towel lined, sided baking sheet.
Sprinkle with salt and serve.
Ingredients:
corn tortillas peanut oil or oil of choice salt 1. Heat oil in a large pot or iron skillet on high to 375 degrees F. I tested several temperatures and figured out that my optimum temperature was around 375. You do not have to use a thermometer. You can gauge the temperature of your oil by how quickly your chips cook. 2. Using a pizza cutter (amazon link), cut corn tortillas into triangles or strips. 3. Gently slide tortilla triangles into hot oil. I fry about a dozen chips at a time. Fry until they start to crisp and turn golden then gently lift them out onto a cooling rack over a paper towel lined pan. Make sure not to over brown them. They will be done in about a minute or less. 4. Sprinkle chips with salt. Cool for a few minutes on the cooling rack. Repeat with the remaining chips. These chips will stay fresh and crisp in an airtight container for several days (if they last that long). If making for a potluck or school function, use canola or vegetable oil in case if anyone has peanut allergies.

Slow Cooker Potato Soup is one of my favorite meals. I bet I have already made it five times this winter. I always have potatoes and bacon on hand and it's easy to throw this soup together so it has become a regular in our meal rotation. (I keep bacon in the freezer until I need it so I am always prepared for bacon emergencies). Lol.
I have been making slow cooker potato soup for years and my family loves it. Of course, my boys love anything with bacon, but this soup is yummy (even without the bacon). It is buttery, creamy or brothy, depending on how you make it, warming and delicious.
I have been making this soup creamy by mashing it with a potato masher (amazon link) before serving. You could also use an emersion blender (I have this simple 2 speed corded one and it works great, amazon link). I am updating this post with new photos, but as you see in the older photo above, you can also serve the soup brothy style instead of creamy if you prefer.
My favorite thing about this soup of course is that I make it in the slow cooker. I love being prepared and having most of my kitchen work done before the boys come home from school. It just makes my evening so much easier.
If you like serve with shredded cheese, chives and of course extra bacon.
Slow Cooker Potato Soup
Ingredients: 6 large potatoes, cubed (Russet or Yukon Gold work great and I don't peel them) 1-2 onions, diced 1 rib celery, sliced 1/2 lb. or more bacon, cooked and crumbled 4 cups chicken or vegetable broth 1 cup water 1 Tbsp. dried parsley salt to taste* freshly ground pepper to taste 1/3 cup butter 1 3/4 cups half and half chopped chives (optional) shredded cheese (optional) 1. Combine all ingredients except milk and chives in a slow cooker (amazon link) . I actually add half the bacon now and garnish with the remaining fresh crisped bacon at serving time.** 2. Cover. Cook on low 8-10 hours. Stir in half and half during last hour. 3. If you like it brothy, serve as is. If you like it creamy, mash it up with a potato masher or emersion blender. 4. Garnish with shredded cheese, chives and extra bacon if desired. *If using homemade broth you may need more salt than you will with store bought broth. **I cut the bacon up with kitchen shears and fry in an iron skillet (amazon link) for perfectly crisp bacon crumbles.

This baked apple cinnamon overnight oatmeal has been one of our favorite fall breakfasts that will carry us into winter. The boys are at home doing virtual school now, but this was a favorite on busy school mornings too. Since I put it all together the night before and store in the fridge overnight, it's a breeze to bake the next morning.
I peel and chop the apples so this takes a little prep work, but it's worth it when you get to enjoy fresh apples in this hearty baked oatmeal. Then, I mix everything together and pour into my smaller iron skillet (10 inch) and put in the fridge overnight.
This baked oatmeal is hearty and delicious. It's more like a muffin or bread than a bowl of oatmeal, but without any flour. The boys love it and ask for more. It's one of my favorite breakfasts too.
Baked Apple Cinnamon Overnight Oatmeal
Ingredients: 2 ½ cups old fashioned oats 1/2 cup packed brown sugar or coconut sugar 1 teaspoon baking powder 2 teaspoons chia seeds (amazon link) 1 teaspoon cinnamon 1 1/2 cups milk ¼ cup butter or coconut oil, melted 1/4 cup applesauce 1 egg, beaten 1 tsp. vanilla 2 cups diced apples Oil or cooking spray for pan Instructions: 1. Combine ingredients in a mixing bowl. 2. Grease a medium casserole or 9 X 9 pan. I use a 10-inch iron skillet (amazon link). 3. Pour oatmeal into pan. Cover and refrigerate overnight. 4. Preheat oven to 375° degrees F. 5. Bake uncovered for 20 minutes. Serve warm.

This has been quite a school year and whether your kids have been in school, virtual, or a hybrid of the two, teachers have put their time in! These jeans will forever be one of my favorite things! Every woman needs a great pair of jeans, and these are great jeans. I have practically lived in these jeans since I first reviewed them on my blog in 2016. Yes I still wear the pair I reviewed and three more I have accumulated since then. I have a pair of Kayla jeans and three pairs of Kara jeans (two denim and one red). Both styles are wonderful, but I think the Kara is my favorite. The Kayla jeans have a mid-rise waist so they sit just below the natural waistline which means you won't have to pull them up at the waist. The Kara jeans are a lower waist and so comfortable. As I have gotten older I have noticed that my skin needs more moisture than it used to. I have made it part of my daily routine to moisturize with a good skin cream and have tried several over the years. I generally try to use more natural products and look for creams with vitamins C and E. Last fall I started using Trim Healthy Mama Orange Silk Hydrating Cream, which my sister got me for my birthday. My favorite, most used gift I received last year is my Instant Pot Duo Crisp + Air Fryer. It is a pressure cooker, but so much more. I have also used the sauté, air fry, sous vide, and dehydrate functions. I use the air fry function the most (here is a recipe for air fryer fried green tomatoes). I have dehydrated lots of fruit this fall using the dehydrate function which is really easy to do. Here is a link to dehydrated pears and apples. And here is a YouTube video showing you how to use the Instant Pot to dehydrate pears. I love this appliance, use it a lot and plan to keep on using it so it has been a good investment for me. A few years ago, my sisters gave me an immersion blender for my birthday. They sent me a Kitchen Aid Immersion Blender and I use it all the time. I have used it so much this fall for canning apple and pear butter and use it frequently when making soups. I love my immersion blender because it so easy to use and clean. This is a great gift idea for someone who loves to cook!

If you are roasting pie pumpkins to make your own pumpkin purée, you can save the seeds and roast them for a healthy and delicious snack.
Toasting the seeds is easy. The only hard part is cleaning them after removing them from the pumpkin.
Cut a pie pumpkin in half, scoop out the seeds and clean them.
Spread the pumpkin seeds out on a buttered cookie sheet and season to roast.
Directions:
Clean the seeds and put them on a buttered cookie sheet. Salt or flavor them how you like and bake in a 400 degree F. oven until lightly browned. This doesn't take long, maybe 5-15 minutes or so depending on the size of the seeds.

Still have any leftover pumpkins from Halloween? Don't throw them out, roast the seeds and make pumpkin purée for your Thanksgiving pumpkin pie. (The smaller pie pumpkins are best.)
We actually grew several types of pumpkins in our garden this year and although many were lost to squash bugs, we did manage to harvest a few nice pie pumpkins. I cooked and pureed them and froze the puree for future recipes. It will be fun making our pumpkin pie this year with our own homegrown pumpkin purée.
Cut the pumpkins in half and scoop out the seeds, then roast face down for about an hour at 350 degrees F.
Scoop the pumpkin out to purée.
Purée with an emersion blender or food processor.

Directions:
You will need a pie pumpkin 1. Cut your pumpkin in half. Scoop out the seeds. You can toast them or compost them. Bake the pumpkin halves in a 350 degree F. oven for about an hour or until it is tender enough to scoop out the pumpkin flesh. 2. Next you scoop out the pumpkin with a spoon and put it in a food processor or put it in a mixing bowl and use an emersion blender to puree it. This is the emersion blender I use. (amazon link) Puree until you have a smooth pumpkin purée.
You can use in your favorite recipes and freeze extra for later. I pre-measure the exact amount that I will need for my favorite recipes before freezing. One of my favorite recipes that the boys love is pumpkin chocolate chip muffins. This browned butter pumpkin pie and these pumpkin cookies with browned butter glaze are also some of our favorite fall recipes.

We've been having cold, rainy weather which makes me want to cozy up with a mug of hot chili. I have been making this garden fresh chili with peppers and tomatoes from the garden and it is hearty and delicious. It's also packed with protein, fiber, vitamins, and minerals making it a healthy choice.

We grew both bell peppers and sweet jalapeños this summer and either is perfect in this chili. If you have peppers left to use, you can freeze them for recipes. I just dice or slice them and freeze in zipper freezer bags.
We have lots of fresh tomatoes from the garden that I still need to can and freeze so I diced fresh tomatoes for this pot of chili. You can use frozen diced tomatoes or a 32 oz. can of diced tomatoes if you do not have fresh. When freezing fresh tomatoes, I just dice them and put them in quart freezer bags for future use in recipes.
Can you make this chili in a slow cooker?
Absolutely! Simply brown the meat, peppers, onion, and garlic in a skillet then add this cooked mixture to your slow cooker. Next add the rest of the ingredients to the slow cooker and cook on low for 4-6 hours until ready to serve.
Garden Fresh Chili
Ingredients: 1 lb. lean ground beef or venison 1 sweet onion, diced 1 bell pepper or a few sweet jalapeños, seeded and diced 2 to 3 cloves garlic, minced 2 (8 oz.) cans tomato sauce 1 can 10 oz diced tomatoes with chilies (I use mild) 1 quart (4 cups) fresh diced tomatoes* 1 can (14-15.5 ounce) kidney beans, drained and rinsed 1 can (14-15.5 ounce) pinto or cannellini beans, drained and rinsed 1/2 teaspoon Salt 1 tsp. oregano 1 T. cumin 2 T. chili powder or more to taste 1 tsp. creole seasoning (the one I use, amazon link) 1 tsp. coriander For an even more amazing chili, these are some optional seasonings that we think makes this chili the most delicious chili ever! 1 bay leaf (remove before serving) 1/8 tsp. nutmeg 1/8 tsp. cinnamon 1/8 tsp. ginger 1 Tbsp. coconut sugar** or brown sugar 1 can 14.5 oz. stewed tomatoes*** Directions: Brown ground beef or venison with onion, bell pepper, and garlic in a Dutch oven or large pot over medium-high heat. Add remaining ingredients. Cover and reduce heat to low. Simmer for about an hour to blend flavors and tenderize the vegetables. Serve with: Saltines, oyster crackers, corn chips, grated cheese (sharp cheddar or cheddar works well), diced sweet onion and sour cream *You can freeze fresh diced tomatoes from the garden in quart zipper bags to use in this chili or you can use a 32 oz. can diced tomatoes. **Coconut sugar (affiliate link) is lower on the glycemic index so it is a healthier option over brown sugar. I use it all the time in cooking and baking. ***(my husband LOVES stewed tomatoes, so I starting adding them and now he loves this chili even more!)

Last year for Christmas, I received an Instant Pot Duo Crisp Pressure Cooker 11 in 1 with Air Fryer, 8 Qt (amazon link). It has been one of my most used Christmas gifts ever. This fall I have been dehydrating pears and apples using the dehydrating function and it is such an easy and delicious way to preserve fresh fruit.
I started out dehydrating pears when a friend gave us a bushel of pears, but have now dehydrated apples too. I dehydrate apples the exact same way as pears which you can see in the video below.
Ingredients:
2 to 3 Apples or Pears Peel fruit, core and slice thin. Place in the Instant Pot Duo Crisp Pressure Cooker 11 in 1 with Air Fryer, 8 Qt (amazon link). Use the dehydrate function for 7 hours at 135 degrees F. Can you use perforated parchment circles for the air fryer when dehydrating fruit? This topic came up in the comments on my youtube video so I ordered some perforated parchment circles to try and here is my experience. I finally bought some air fryer perforated parchment circles. I did not measure the diameter of my Instant Pot Duo Crisp + Air Fryer before ordering and ordered these Zulay parchment circles (amazon link) in 9 inch circles. They did come in a handy pouch with a basting brush. They were bigger than my machine, but I just let them curl up the sides a little and they are awesome for ease of use and having a non-stick surface. I have since used the parchment circles when dehydrating fruit and they make clean-up so easy. I just measured the actual diameter of my air fryer basket and it is 8 inches so next time I will order something like these parchment circles (amazon link) in the 8 inch size.

A dutch baby is kind of like a cross between an omelette and a giant popover, although it is more of a pastry than an omelette. It is truly delicious and if you've never made one, you won't believe how easy they are to make. As a mom of four, I love that when a Dutch baby comes out of the oven, everyone's food is ready at the same time, unlike pancakes or waffles. And since it bakes in the oven, I have down time when I can do other things like clean up or prepare fruit for topping.

Dutch Baby
Serves: 6-8 Prep Time: 5 minutes Baking Time: 20-25 minutes Ingredients: 4 T. butter, separated 6 eggs at room temperature 1 C. whole milk at room temperature 1 C. flour 1 tsp. vanilla 1 T. coconut sugar or granulated sugar 1. Preheat oven to 425 degrees F. Place a large 12" iron skillet (amazon link) in center of the oven. 2. Melt 2 T. butter and combine with rest of the batter ingredients in a blender or use an emersion blender (This is the one I have and use a lot, amazon link) . 3. Add 2 T. butter to the hot skillet in the oven and using oven mitts tilt or rotate skillet to coat the pan with butter. 4. Pour the batter into the hot pan and bake for 20-25 minutes until puffed and golden brown. Resist the urge to open the oven until it has baked for 15-20 minutes so it doesn't fall. 5. When the dutch baby is done, let it cool slightly and settle for a couple of minutes. 6. Serve with fresh squeezed lemon juice and sprinkle powdered sugar on top and/or your favorite fruit. We love it with fresh berries or fried apples. 7. To easily serve, cut into slices with kitchen shears (amazon link). Note: This is a large recipe which serves 6-8. You can cut the recipe size down and use a smaller pan if needed.
