One of my favorite things about warm weather is grilling.  It's so easy and clean-up is a breeze.  We had grilled chicken sausage with onions and mushrooms tonight for dinner and it was wonderful.  Serve with a salad and grilled asparagus and relax with a glass of wine while enjoying the warm weather.  

This is so easy.  You can use these basic ingredients or add your favorite vegetables.

1 package chicken, beef, or pork sausage sliced into medallions
8 oz. fresh button mushrooms, cut in half
1 large sweet onion, cut into chuncks
olive oil
1 T. butter
salt and fresh ground pepper

Combine sausage and vegetables in a foil lined grilling pan.  Cut up butter and sprinkle over sausage and vegetables.  Drizzle a small amount of olive oil over mixture.  Salt and pepper then toss all ingredients to combine.  Grill over medium heat until onion and mushrooms are tender.  I like to let them caramelize a little.  This should take about 30 minutes. 

To make grilled asparagus, snap asparagus spears to break off the tuff ends.  Toss with olive oil, salt and pepper.  Grill til tender and slightly caramelized.  Place asparagus directly on the grill grate.  Asparagus will take less time on the grill.  Watch to make sure it doesn't burn.

I've fallen a little behind over the past couple of weeks because we were out of town twice.  I let the boys watch E.T. one afternoon this week and got a lot accomplished.  Most of this stuff came out of our bedroom and closets.  Our room is not finished yet, but it is so much better.  
I've actually filled 5 bags with trash and recyclables from our room and closets.  I've been bad about letting our room become the catch all for everything so that the rest of the house is clean and clutter free.  I have to stay on top of this because I love having a clutter-free room.  I would love to hear how you are doing if you are participating in the 40 Bags in 40 Days Challenge.  
 
 
October Baby is opening in many theatres across the country this weekend.  It was originally released March 23rd.  I have not seen it yet, since it is not in any theatres near my home.  This movie tells the story of a young woman who finds out that she was adopted after a failed abortion attempt.  She sets out on a journey to find her birth mother and uncover her past.  The actress who plays the birth mother shares her incredible true story on this video.  Click on the third video picture at the bottom (Shari's Story)

I love this recipe for cornbread.  It has become a fast favorite in our house.  I  found this recipe at Money Saving Mom and tweaked it to accomidate my baking pan dimensions.  

World’s Best Honey Cornbread
  • 2/3 cup sugar 
  • 1/4 cup butter, softened
  • 4 eggs
  • 1/2 cup honey
  • 1 1/3 cups milk
  • 2 1/3 cups flour
  • 1 1/2 Tablespoon baking powder
  • 1/2 cup corn meal
  • 1 teaspoon salt
Preheat oven to 400 degrees. Cream sugar and butter. Add in eggs, honey and milk and mix well.

Mix together flour, baking powder, corn meal and salt. Mix dry ingredients with wet ingredients carefully. Do not overmix. Batter will be lumpy.

Pour batter in greased 11×14-inch baking pan. Bake for 35 minutes or until golden brown.



*I have been using a glass 9 X 13 pan at 375 degrees for 25-30 minutes.
