I am going to share two weeks of menus today since I am forever behind on this venture. Enjoy!
Sunday: Easy Oven Roasted Chicken with Garlic, Red Potatoes, Sugar Snap Peas Monday: Leftovers Tuesday: Hamburgers with onions, Salad Wednesday: Vidalia Chicken Salad, Cream cheese celery, strawberries, apple slices Thursday: Slow Cooker Butter Bean Soup (still working on this recipe) Friday: Roasted Brussell Sprouts, Rice, Panko Crusted Swai (made with my Panko Crusted Tilapia recipe) Saturday: Dinner out after the Spring Game Sunday: Tacos Monday: Beef and Noodles adapted from my Slow Cooker Beef and Mushroom recipe, I put beef round steak, Lipton Beefy Onion Soup Mix, Red wine, and 8 oz. fresh sliced mushrooms in crockpot for about 8 hours, then during last 15 minutes or so added a cup of water with 1 T. cornstarch dissolved in it. Served over hot cooked egg noodles with green beans. Tuesday: Cuban Black Beans with Rice, avacado, tomatoes, cilantro and limes Wednesday: Broccoli, chicken, and quinoa casserole Thursday: Leftovers, homemade bread Friday: Vegetarian pizza and salad Saturday: Family Easter potluck Sunday: Another family Easter potluck I took everything cookies to both potlucks with the addition of Easter M & M's in them. I used less chocolate chips since I added M & M's.
