You have probably noticed that I haven't posted a menu plan in forever. I have been recovering from some pretty severe burn wounds and have been taking it easy in the kitchen. I have two weeks of old menus to post, but then I am taking a break for a while.
I burned myself in the kitchen a couple of weeks ago by spilling boiling water on my thigh and foot. Funny since I taught Home Economics for 10 years. You think I would be more careful in the kitchen.
It has been a very painful recovery, but my foot looks and feels great. My thigh burn is still healing. I have been to the doctor four times over that past two weeks and it is a slow recovery. I return to the doctor next week to see if the wound is any smaller and possibly schedule surgery. I may have to have a skin graft or a slightly less invasive flap procedure. Keep me in your prayers and hopefully I won't have to have surgery. Surgery will require bed rest which is pretty tough to do with three little boys.
We have been eating really simple meals and enjoying the generosity of family and friends who made us dinners while I have been recovering so I am taking a break for a while from the menu plan. Here are a couple of weeks of menus from before my injury that might inspire some yummy meals.
Monday: Pulled pork, corn, grapes
Tuesday: Leftover pork, baked beans, sugar snap peas
Thursday: Dinner at VBS
Friday: Chicken Noodle Soup
Saturday: Broccoli, Chicken and Quinoa Casserole
Sunday: Leftover casserole and sugar snap peas
Monday: Emeals recipe for roast and salad and pearled cous cous
Tuesday: Homemade breadsticks, takeout pizza, salad
Wednesday: Chicken tenders, sweet potato fries, grapes
Thursday: Flat iron steak, salad, brussel sprouts
Friday: BBQ chicken, baked beans, leftover salad, grilled cabbage
Saturday: pulled pork, cole slaw, black bean and corn salad,
Sunday: Takeout chinese
