2 Tbsp. chopped onion
1 clove garlic
1 T. lime juice
salt and fresh ground pepper
1. Chop tomato, onion, and garlic.
2. Next, mix in lime juice and generously salt and pepper to taste.
3. You can leave it chunky like above or puree in food processor.
This is a delicious mild salsa. If you like some heat, add some hot peppers. Also, would be good with chopped cilantro. We're just not huge cilantro fans. Add to a cheese quesadilla and you have a nice light meal or snack.
