This has quickly become my favorite way to prepare asparagus. We have been enjoying lots of asparagus since it is coming into season and has been on sale lately. This is such a simple recipe that lends itself well to whatever vegetables and seasonings you like best.
Portabello mushroom caps
fresh ground pepper
1. Break off the thick ends of the asparagus and discard. Chop the remaining asparagus into 2" pieces. Slice the mushrooms and onions.
2. Drizzle some olive oil into your skillet. Add the vegetables, a few pats of butter, salt and pepper. If you have nice specialty salts this is a fun recipe to use them in. I have been using some nice Hawaiian salts from my in-laws. Just sprinkle in the flavor until you are happy.
Saute at medium heat, stirring occasionally until vegetables are tender about 15-20 minutes.
