This is a really simple and wonderful recipe for homemade vegetable and beef soup. It cooks on low in the crock pot all day so when the kids are crazy hyper as mine always are around 5:00 pm all you have to do is stir and serve. This would pair wonderfully with some homemade beer bread. It does take some prep work in the morning, but you could assemble the night before and refrigerate. If you assemble the night before, I would add the water the next morning. I used to do that when I was teaching and didn't have extra time in the morning. This makes a lot of soup and you will need a large crock pot. If you can't fit it all in there just reduce some of the vegetables to a manageable amount. You will really enjoy this soup and unless you have a posse of kids plan on leftovers the next night.
Homemade Vegetable and Beef Soup
1 1/2 to 2 pounds beef stew meat, cut in 1 inch pieces
2 Tbsp. oil
4 potatoes, cubed
4 carrots sliced in rounds
2 ribs celery sliced
14.5 oz. can diced tomatoes
14.5 oz can Italian tomatoes, crushed (If you don't have Italian tomatoes on hand, just use plain tomatoes and add a little Italian seasoning and garlic powder. I have been adding Tastefully Simple Mama Mia Marinara seasoning to plain tomatoes because I never remember to buy Italian tomatoes.)
1 onion chopped
1 to 2 wedges cabbage, sliced thinly
2 beef bouillon cubes
2 tsp. dried parsley
1 tsp. seasoned salt
1 tsp. garlic salt
1/2 tsp. pepper
1. Brown meat in oil in skillet. Drain.
2. Combine all ingredients except water in large slow cooker. Cover with water. It should be full to the brim and packed pretty full. The vegetable will cook down all day and eventually the soup will be less dense and you will be able to stir it.
3. Cover. Cook on low 8-10 hours.
I adapted this recipe from one I found in my Fix It and Forget It Cookbook. The ingredients have been changed slightly, but it was originally submitted in the cookbook by Lilli Peters. Sometimes I add a bay leaf or two during the cooking and remove it before serving.
My preschooler and toddler enjoy this soup too. I just serve them with a slotted spoon so they don't have much liquid.
