Our family loves salads and now that we have kids involved in evening activities, a chef salad is one of my busy weeknight meals. In 20 minutes I can have a healthy dinner on the table that the boys heartily devour.
I start with a 5 oz. container of Spring mix salad greens (Ruler Foods has Organic Spring Mix for $1.69). I add chopped boiled eggs (boil them ahead of time). Chopped ripe avocado, tomatoes (grape or diced), freshly grated cheese, any other vegetables I have on hand like diced peppers or grated carrots, and crumbled cooked bacon. I microwave the bacon and it cooks crisp pretty fast. I use about a 1/2 lb. of bacon. Super easy and fast and everyone loves it.
