There's nothing like waiting until the last minute, but for some of us, that's when inspiration hits and our best ideas come alive.

Another week of menu ideas. Some new things, some old favorites. I think
clam chowder was our favorite new meal we tried.
Sunday: Leftover corn pudding, Ribs, Roasted onions
Monday: Chef Salad with bacon, boiled eggs, and avocado
Tuesday: Ground beef and Vegetable Soup, Homemade bread
Wednesday: Chicken and Stuffing in a Crockpot (wasn't as good as I was hoping)
Thursday: Clam Chowder
Friday: Pan fried pork chops, cous cous, steamed broccoli
Saturday: Bread stick pizza (I made bread machine bread stick dough and made the dough into a pizza, salad

I thought I would share some ways I like to use leftover mashed or baked potatoes. These recipes are delicious and often requested by the boys. Sometimes I even make extra potatoes just to use as ingredients later in the week which simplifies meal planning. These recipes are all pretty budget friendly too since the main ingredient potatoes are inexpensive.
Sunday: salad, grilled cabbage, grilled smoked sausage
Monday: rice, fish sticks
Tuesday: baked honey teriyaki chicken, fried rice, steamed broccoli
Thursday: Slow Cooker Butter bean Soup (still tweaking this recipe), Honey cornbread
Friday: Honey Teriyaki Chicken Skewers, baked rice, grilled pineapple
Saturday: Night out for Mom and Dad,
We have been eating pretty simple meals and enjoying the warm weather.
Sunday: Family potluck
I took everything cookies with the addition of M & M's in them. I used less chocolate chips since I added M & M's.
Monday: Traveling (fast food)
Tuesday: Cheese tortellini with tomato and basil pasta sauce, salad
Wednesday: Baked sweet potatoes, marinated deer steak, sugar snap peas
Thursday: Slow cooker italian chicken served over penne pasta, sauteed asparagus
Saturday: Grilled hamburgers and hotdogs, sauteed mushrooms with onions, roasted brussel sprouts, baked beans

Sunday: Easy Oven Roasted Chicken with Garlic, Red Potatoes, Sugar Snap Peas
Tuesday: Hamburgers with onions, Salad
Wednesday: Vidalia Chicken Salad, Cream cheese celery, strawberries, apple slices
Thursday: Slow Cooker Butter Bean Soup (still working on this recipe)
Friday: Roasted Brussell Sprouts, Rice, Panko Crusted Swai (made with my Panko Crusted Tilapia recipe)
Saturday: Dinner out after the Spring Game
Monday: Beef and Noodles adapted from my Slow Cooker Beef and Mushroom recipe, I put beef round steak, Lipton Beefy Onion Soup Mix, Red wine, and 8 oz. fresh sliced mushrooms in crockpot for about 8 hours, then during last 15 minutes or so added a cup of water with 1 T. cornstarch dissolved in it. Served over hot cooked egg noodles with green beans.
Tuesday: Cuban Black Beans with Rice, avacado, tomatoes, cilantro and limes
Wednesday: Broccoli, chicken, and quinoa casserole
Thursday: Leftovers, homemade bread
Friday: Vegetarian pizza and salad
Saturday: Family Easter potluck
Sunday: Another family Easter potluck

We're having another round of cold weather this week. Hopefully the last of the season. A few menu ideas from last week. Nothing too exciting, but some simple, good food.
Sunday: nachos (We had a big buffet lunch.)
Monday: Steak, sauteed asparagus and onions, strawberry, spinach, and gorgonzola salad
Tuesday: Papa John's takeout pizza (customer appreciation day $6 pizza), bread machine breadsticks
Wednesday: Vegetable and Ground beef soup (with deer), bread machine bread
Thursday: Tater tot casserole (with ground deer)
Friday: Salmon patties, cous cous, tomato caprese
Extras: Crock pot oatmeal, Healthy Breakfast Cookies
I know I haven't been very good at posting a weekly menu plan. Life is busy and I'll post it when I am able. Hoping for some warmer weather next week and some outdoor meals.
Sunday: Caramelized onion and Spinach Grilled cheese sandwiches, french fries, canned peaches
Monday: Chicken and Dumplings
Tuesday: Slow Cooker Macaroni and Cheese, Steamed Broccoli
Wednesday: Corn (from my parents' garden), Ribs, Bread Machine Buttery Rolls, leftover macaroni and cheese
Thursday: Slow Cooker Sausage, Apples, and Sourkraut, Homemade Applesauce, leftover corn
Friday: Potluck Dinner, I took Hot Ham Sandwiches
Kind of a simple week of meals, but some good ones. It must be a busy week when you have pizza twice in one week.
Sunday: Pizza, salad (with extended family)
Monday: Spaghetti, salad (with extended family)
Tuesday: turkey, stuffing, roasted asparagus
Wednesday: Wow Wednesday dinner at church
Thursday: Beef and Broccoli stir fry, white rice
Friday: beef stroganoff over noodles, sugar snap peas
Saturday: pizza, caesar salad
