Roasted Onions

It is amazing how roasting onions completely changes them.  I cut the ends off the onions with great difficulty as tears rolled down my face.  I could barely see what I was doing as I was reminded why I never buy yellow onions and stick with milder sweet onions for everyday cooking.  Yet when these came out of the oven all I could smell was heavenly warm deliciousness.  

And delicious they were.  My seven year old who picked all of the onions off of his pizza a few days ago asked for seconds.  Yeah!  Healthy superfood onions and the boys like them!

Ingredients:
1 bag small to medium yellow onions
1/4 C. olive oil
2 T. butter
Freshly ground black pepper
Freshly ground sea salt

1.  Slice ends off the onions leaving the outer skins on.  Arrange onions in a sided pan.  

2.  Drizzle olive oil over the onions.  Put a small pat of butter on top of each onion.  

3.  Salt and pepper generously.  Bake at 375 F. for 25 minutes.  

4.  Increase temperature to 400 F. and bake for another 20-30 minutes until tender.  

5.  Let cool a few minutes before serving.  They hold heat and will still be warm well into your meal.  Remove the outer skins before consuming.

Honey Corn Pudding

Sweet and savory, enjoy honey corn pudding with your best BBQ or burgers for a delicious and easy side.  
5 large eggs
1/2 cup half/half 
1/3 cup (5 1/3 T.) butter, melted
1 T. turbinado or granulated sugar
2 T. dark brown sugar
2 T. Honey 
1 T. orange juice
1/4 C. cornstarch

1/8 to 1/4 tsp. red pepper flakes
1/4 tsp. ground nutmeg
Dash onion powder
1/4 tsp. sea salt
1/4 tsp. fresh ground pepper
2 (15.25 oz.) cans whole kernel corn, drained
2 (14.75 oz.) cans cream-style corn

1.  In a large bowl, lightly beat eggs then add 1/2 & 1/2.  Stir in the remaining ingredients, adding the corn last.  Blend well. 


2.  Pour mixture into a buttered 2 quart casserole dish.  Bake in a preheated 400 degree oven for one hour or until golden brown.  Remove from oven and cool for 10 minutes.  Serve warm.

Taco Bar

Nothing fancy here, just good simple food that our family loves.  This is one of our favorite go-to meals that makes it into our menu plan frequently.  Super casual and perfect for busy school nights.  Paper plates are the way to go on taco night for this busy Mom.  

I stay away from the store bought taco seasoning and prefer simpler, more natural meat flavored with fresh onion and any seasonings I feel like throwing in.  This is one of my favorite uses for ground deer.  I shred my own cheese because I prefer the softer texture without anything added to it and it is so easy to shred it myself.  Most of the time we use store bought soft and crunchy taco shells, but every now and then I fry soft corn tortillas to make homemade crunchy shells (pictured above).  I fry taco shells the same way I make homemade tortilla chips, I just leave them whole for taco shells and try to fold them with tongs while frying.  

Taco Bar:

Ground beef or deer, cooked with a diced onion and any seasonings you like
Freshly shredded cheese
Diced tomato
Shredded lettuce
Sour cream 
Taco sauce or salsa, if you like
Crunchy or soft taco shells

We serve family style at the table and the kids (with a little help) make their own tacos.  They love it.

Some Printable Coupons that Might Just be Worth Your Time

I don't write about coupons very often.  To be honest, I barely have time to clip them myself.  So when I do take the time to post about them it's because they are valuable enough to be worth my time, not only to print and clip them myself but to share them with you.  I printed coupons today from coupons.com which I do every 6-8 weeks (told you, I'm not a super couponer).  I was pleased with several of the high value coupons and thought they were worth my precious time to share them. (You know my time is precious, I have 3 boys.  Your time is precious too, thank you for reading.)  There are loads of coupons to select from, but only print the ones you will use.  Don't forget, you can print them twice.  Here are a few of my favorites.  
Save 75 cents off any Cascadian Farm product
Save $1 off one Simply Orange Juice (our favorite brand)
Save $2 off Pull-Ups, Also lots of diapers and Good Nights coupons
Save $5 on any Clear Care or Opti-Free solution 10 oz. or larger (loving this coupon since I go through Clear Care like crazy and it is not cheap)
Save $1 off Charmin Ultra Soft or Strong
