We were sent all of the ingredients with the recipe cards to make lemon-chive salmon with dill-roasted red potatoes and mixed green salad and Italian meatballs and orzo. The ingredients are color coded to match the recipe card they coordinate with. (I didn't realize this until writing this post, but it sure does make it easy.)
Both meals were fantastic and we were able to make them in under 40 minutes. Our absolute favorite meal was the lemon-chive salmon (pictured above) It was incredible! The potatoes were perfectly cooked and seasoned, the salad was delicious plus it was fun using ingredients we don't normally use, and the salmon was so tender and flavorful. Luckily our kids ate dinner at church the night we made this because we finished it all ourselves. This meal is amazing and I would order it again, but not to feed a family of four. I think it is best proportioned to feed two to three people.
The second meal we tried was the Italian meatballs and orzo made with cremini mushrooms, lacinato kale, tomato sauce, and fresh herbs. This meal was really good too and expanded our horizons a bit. I have never cooked with kale and was hesitant to do so, but did so that I could follow the recipe exactly and share this experience with you honestly. To our surprise we didn't notice any strong flavors from the kale. It blended in nicely with the recipe which was quite tasty. I thought this recipe was a little more involved than the salmon, but was still fairly quick to prepare. It took right around 40 minutes. The meatballs were even better the next day as leftovers and did make enough to feed a family of four.

We all like to save money, but we don't often have time to run all over town looking for the best deals. And for many of us with kids in tow (myself included) there is no such thing as running quickly into a store to comparison shop. We have been so busy lately. I just finished up my last summer graduate class and we have spent the past week packing, moving, and cleaning. In fact we are still moving the last of our things and cleaning our old home. To add to our craziness of going through a move, we will be adjusting to a completely new school and all the changes that it brings. New routines, clubs, sports, and activities while fun and enriching add more to our already full plates. It is a busy season with so much going on in our lives and with school starting this week that we have to be careful not to get too run down. Plus as a mother of three with a new baby on the way, I have to make sure and stay healthy so that I can take care of my family.
I developed the sniffles this week and was glad to stock up on some things to help ward off any colds. I purchased Emergen-C and ChapStick at my local Walmart. Emergen-C is packed with B-vitamins, antioxidants, electrolytes plus more vitamin C than 10 oranges. Plus with over 20 flavors, there are plenty of varieties to choose from*. ChapStick softens and protects lips every day with 11 moisturizing ingredients. SPF 12 provides UVB protection and the hydrating formula contains aloe and vitamin E. I love the tropical ChapStick flavors which come in a convenient 3-pack. My oldest actually picked out the tropical ChapStick and is so excited about them.

You can find Emergen-C and ChapStick at Walmart in the health and beauty section located near the pharmacy, specifically under the heading Cold & Flu.
I decided to make some delicious Vitamin C packed popsicles for an extra boost with fresh pineapple, Emergen-C, cream of coconut and pineapple juice (not pictured).
First core and chop a fresh pineapple.
Then put all ingredients in the blender.
Blend to make a beautiful creamy puree. This would be so good as a smoothie blended with some crushed ice too.
Pour into popsicle molds or paper cups to freeze.
Pineapple Coconut Orange Popsicles
1 fresh pineapple, chunked
1 cup cream of coconut
2 to 3 packets of Emergen-C (orange flavored)
½ cup pineapple juice
1. Cut pineapple into chunks then place in blender.
2. Add remaining ingredients and blend until pureed.
3. Pour into popsicle molds or paper cups with popsicle sticks and freeze.
4. Place molds under warm running water a few seconds to loosen popsicles or peel off paper cups.
Makes 8 to 10 popsicles depending on size of molds. These popsicles are delicious and remind me of a creamsicle with their creamy icy texture. If you want them less creamy and more icy, use less or omit the coconut cream.
Enjoy extra savings when you stock up at Walmart on both Emergen-C and ChapStick with these coupons just in time for the busy back-to-school season. We love shopping at Walmart since it has everything we need and find ourselves there on a weekly basis. We always pick up some groceries while there and even finished up our school shopping on this trip.
This is my favorite dish soap so I always stock up when there is a good deal. I printed some new Target coupons this morning and there was a new coupon for $1 off Seventh Generation dish soap. Remember, you can print these twice. Last week I printed two manufacturers coupons for $1 off Seventh Generation dish soap from coupons.com so I combined the two and paid just $0.69 each. I don't think the manufacturers coupon is still available from coupons.com, but if you already have it in your coupon organizer, this is a great time to stock up on dish soap. Even if you don't and just use the Target coupon, $1.69 is a decent price. The price sign said that the soap was on sale for $2.99, but it rang up at $2.69.

I don't write about coupons very often. To be honest, I barely have time to clip them myself. So when I do take the time to post about them it's because they are valuable enough to be worth my time, not only to print and clip them myself but to share them with you. I printed coupons today from coupons.com which I do every 6-8 weeks (told you, I'm not a super couponer). I was pleased with several of the high value coupons and thought they were worth my precious time to share them. (You know my time is precious, I have 3 boys. Your time is precious too, thank you for reading.) There are loads of coupons to select from, but only print the ones you will use. Don't forget, you can print them twice.
