I am several weeks behind on posting the menu plan. So far behind that this Sunday night quesadilla meal is from Super Bowl Sunday. Oh well, I'm a busy Mom so I'll give myself a little grace. Here are some menu ideas. If you are anything like me, you need ideas...and a maid and a babysitter...what else can we wish for? Maybe a massage.
Monday: Honey Lime Shrimp, White Rice, Salad
Tuesday: Pizza (Papa John's has a $6 carryout pizza the first Tuesday of every month and the boys love it with the garlic sauce)
Wednesday: Lazy Cabbage Roll Casserole
Thursday: Baked Potato bar with bacon, sour cream and shredded cheese, steamed broccoli
Saturday: Slow Cooker Beef and Vegetable Soup
Another week of menu plans. Lots of comfort food this week since it is completely frozen outside.
Sunday: Frito Chili Pie
Monday: Chicken and Rice Bake, Spinach salad
Tuesday: Spaghetti and meat sauce, homemade breadsticks, spinach salad
Wednesday: Homemade Pizza, leftover breadsticks, leftover salad
Thursday: Chicken, Broccoli, and Quinoa Casserole, grape tomatoes
Friday: Tater Tot Casserole, grape tomatoes
This is our weekly menu from a few weeks ago. I am not posting anything from "flu week" since we were lucky to have dinner at all and meals were super simple.
Monday: Beef and Noodles (Thanks for the homemade noodles Jennifer! They were great.), Roasted Potatoes
I know kind of weird starch with starch, but that's what I felt like making and it was good.
Tuesday: Marinated Flat Iron Steak, Cous Cous, Sauteed peppers and onions
Wednesday: Chicken Noodle Soup (my husband was sick and requested chicken noodle soup) Didn't realize at the time, but we were about to have a flu outbreak.
Thursday: Slow Cooker Potato Soup
Friday: Hamburgers, Baked beans, chips, pickles
Saturday: We went to a friend's house, boys had macaroni and hot dogs
It's been a while since I posted a menu plan and I've come to realize that at this crazy busy point in my life, I just don't have time to post a weekly menu plan. However, I still write some of our meals down in my blogging binder and will post them periodically when I actually have some time to sit down and compose a post. These are all meals that we have enjoyed over the past month. I hope you find some meal planning inspiration and enjoy them as much as we do.

I baked it in my large iron skillet instead of a 9 X 13 pan and it was the best cornbread I have ever made. It was perfectly moist and delicious.

You have probably noticed that I haven't posted a menu plan in forever. I have been recovering from some pretty severe burn wounds and have been taking it easy in the kitchen. I have two weeks of old menus to post, but then I am taking a break for a while.
I burned myself in the kitchen a couple of weeks ago by spilling boiling water on my thigh and foot. Funny since I taught Home Economics for 10 years. You think I would be more careful in the kitchen.
It has been a very painful recovery, but my foot looks and feels great. My thigh burn is still healing. I have been to the doctor four times over that past two weeks and it is a slow recovery. I return to the doctor next week to see if the wound is any smaller and possibly schedule surgery. I may have to have a skin graft or a slightly less invasive flap procedure. Keep me in your prayers and hopefully I won't have to have surgery. Surgery will require bed rest which is pretty tough to do with three little boys.
We have been eating really simple meals and enjoying the generosity of family and friends who made us dinners while I have been recovering so I am taking a break for a while from the menu plan. Here are a couple of weeks of menus from before my injury that might inspire some yummy meals.
Monday: Pulled pork, corn, grapes
Tuesday: Leftover pork, baked beans, sugar snap peas
Thursday: Dinner at VBS
Friday: Chicken Noodle Soup
Saturday: Broccoli, Chicken and Quinoa Casserole
Sunday: Leftover casserole and sugar snap peas
Monday: Emeals recipe for roast and salad and pearled cous cous
Tuesday: Homemade breadsticks, takeout pizza, salad
Wednesday: Chicken tenders, sweet potato fries, grapes
Thursday: Flat iron steak, salad, brussel sprouts
Friday: BBQ chicken, baked beans, leftover salad, grilled cabbage
Saturday: pulled pork, cole slaw, black bean and corn salad,
Sunday: Takeout chinese
I am so behind on posting our menus. We did some traveling, then I got strep throat and now I am busy helping with Vacation Bible School. Here is a list of our menus for the past month. I will provide links to recipes whenever possible. I hope this helps give you some ideas. Feel free to share your favorite recipes and menu plans in the comments. I love to try new recipes.
