I was craving blackeye peas and mashed potatoes today.  Maybe it was a pregnancy thing.  I grew up in the South and one of my babysitters when I was little, Ms Ruth, made the best blackeye peas and mashed potatoes for lunch.  It was my favorite.  This recipe is adapted from Serious Eats Recipes.


Ingredients
  • 1 pound dried black-eyed peas
  • 5 ounces (6 slices) bacon, cut into 3/4-inch squares
  • 1 onion, chopped
  • 4 garlic cloves, peeled and chopped
  • 1 tablespoon dried oregano or Italian seasoning
  • 1/4 teaspoon freshly ground black pepper
  • 2 bay leaves
  • 2 teaspoons sea salt
  • 2 teaspoons Tabasco or other hot sauce

1.  Soak the blackeye peas
  • Quick soak:  Rinse and sort the peas in a large pot.  Add 6-8 cups hot water.  Bring to a rapid boil; boil for 2 minutes.  Remove from heat.  Cover and let stand 1 hour.  Drain soak water and rinse peas.  
  • Overnight soak:  Rinse and sort peas in a large pot.  Add 6-8 cups cold water.  Let stand overnight or at least 6-8 hours.  Drain soak water and rinse peas.  
2.  Place the bacon in a small cast-iron pot or Dutch oven over medium-high heat and cook until it renders its fat, about 6 or 7 minutes.

3.  Add the onion, garlic, oregano (or Italian seasoning), and black pepper and cook, stirring, for about 8 minutes. 

4.  Add the drained peas, bay leaves, salt, and 6 cups water.  Simmer gently with lid tilted until desired tenderness is reached, about 1 1/2 to 2 hours.

5.  Stir in the Tabasco and serve.

 
 
I was shopping in Target yesterday and noticed a display of nice hams that were 1/2 price.  I bought the smallest one they had, 8 1/2 pounds thinking that it would make a couple of nice meals and then I could freeze the hambone and extra meat for soups and recipes.  It was marked down to $1.49 a pound.  Pretty inexpensive per pound for a nice spiral sliced honey ham.  I went to Meijer yesterday too and their hams were also half price - a little less.  I think around $1.29 a pound.  We had delicious ham for dinner tonight and have some in the fridge for sandwiches and dinner tomorrow night.  I froze the rest of the meat and the hambone for soups and recipes.  I spent around $12 on the ham, but I will be able to make several meals out of it.

There is a good deal at Target this week on Huggies and Pampers jumbo packs of diapers and training pants.  They are all on sale for $8.99 and when you buy three, you get a $5 gift card at checkout.  Combine this with coupons and you have a really good deal.  I was able to use two Pampers coupons each for $2 and a Huggies Pull-ups coupon for $1.50.  After coupons and the gift card deal, I paid $5.49 a pack.

Honey Chicken Kabobs
(adapted from Mom Advice)

We have made these kabobs twice this month already and love them.  They are so easy to make. You marinate the meat and veggies a few hours before dinner so all you have to do when dinner time arrives is assemble the skewers and put on the grill.  They are so tender and juicy - just delicious.  I don't even bother to reserve marinade and baste.  I have made them with onions, peppers, and mushrooms and with onions and pineapple.  Delicious either way.  I did not marinate the pineapple.  I just used it straight from the can.  Serve with rice or a salad and you have a wonderful Spring meal.  My 3 year old loves this!  My husband says it reminds him of bourban chicken from the mall, only better because it is less greasy.  

1/4 cup canola or vegetable oil
1/3 cup honey
1/3 cup soy sauce
1/4 teaspoon ground black pepper
2 cloves garlic minced
8 skinless, boneless chicken breast halves – cut into 1 inch cubes (I use 3 or 4 since we are a small family and this makes 7-8 kabobs for us)

An assortment of vegetables:  (pick and choose)

5 small onions, cut into 2 inch pieces or one large onion cut into chunks
fresh whole mushrooms
red bell peppers, cut into 2 inch pieces
canned or fresh pineapple chunks
or any of your favorite vegetables

Metal or bamboo skewers (If using bamboo, soak them in water for a couple of hours before assembling.)

In a large bowl, whisk together oil, honey, soy sauce, pepper, and garlic. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken and vegetables in the bowl and marinate in the refrigerator at least 2 hours (the longer the better). Preheat the grill for high heat. Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers. Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.
